Ingredients (Canada-friendly):
- 1 cup Vital Wheat Gluten (Canada Prairie-based suppliers available)
- ¼ cup Chickpea flour (Alberta-grown pulses)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Poultry seasoning
- ¾ cup Vegetable broth
- 1 tbsp Canola oil
- For Herbed Gravy:
- 1 tbsp vegan butter or canola margarine
- 1 tbsp all-purpose flour
- ½ cup vegetable broth
- ½ tsp dried thyme
Prep Time: 15 minutes
Cook Time: 20 minutes
Directions:
- Mix vital wheat gluten, chickpea flour, garlic powder, onion powder, and poultry seasoning in a bowl.
- Add broth and oil; stir until a dough forms.
- Knead for 1–2 minutes until the dough becomes elastic.
- Flatten into cutlet shapes.
- Simmer gently in vegetable broth for 10 minutes (don’t boil).
- Pan-sear each cutlet in a little oil until golden.
- For gravy: melt vegan butter, whisk in flour, add broth, add thyme; cook until thick.
- Serve cutlets with gravy spooned over top.
