Prairie Chick’n “Cutlets” with Herbed Gravy

Ingredients (Canada-friendly):

  • 1 cup Vital Wheat Gluten (Canada Prairie-based suppliers available)
  • ¼ cup Chickpea flour (Alberta-grown pulses)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Poultry seasoning
  • ¾ cup Vegetable broth
  • 1 tbsp Canola oil
  • For Herbed Gravy:
    • 1 tbsp vegan butter or canola margarine
    • 1 tbsp all-purpose flour
    • ½ cup vegetable broth
    • ½ tsp dried thyme

Prep Time: 15 minutes
Cook Time: 20 minutes

Directions:

  1. Mix vital wheat gluten, chickpea flour, garlic powder, onion powder, and poultry seasoning in a bowl.
  2. Add broth and oil; stir until a dough forms.
  3. Knead for 1–2 minutes until the dough becomes elastic.
  4. Flatten into cutlet shapes.
  5. Simmer gently in vegetable broth for 10 minutes (don’t boil).
  6. Pan-sear each cutlet in a little oil until golden.
  7. For gravy: melt vegan butter, whisk in flour, add broth, add thyme; cook until thick.
  8. Serve cutlets with gravy spooned over top.
